Ingredients

1 honeydew melon - peeled, seeded and cubed2 cucumbers, peeled and sliced½ red onion, minced1 bunch fresh mint, minced⅓ cup extra-virgin olive oil½ lemon, juiced, or to tastesalt and ground black pepper to taste
Directions

Mix together honeydew melon, cucumbers, red onion and mint in a large bowl. Add olive oil and toss to coat. Stir in lemon juice, salt, and pepper to taste. Cover and refrigerate until chilled, about 40 minutes.
