½ large red onion, minced4 green onions, minced3 garlic scapes, minced1 red bell peppers, minced2 carrots, peeled and minced2 large stalks celery, minced⅓ large English cucumber, minced⅓ zucchini, minced2 (15 ounce) cans chickpeas (garbanzo beans) - drained, rinsed, and mashed with a fork2 tablespoons capers, with liquid¼ teaspoon ground paprika⅛ teaspoon cayenne pepper¼ cup Italian-style salad dressingsalt and ground black pepper to taste1 tablespoon olive oil, or as needed12 slices whole-wheat bread

Mix red onion, green onions, garlic scapes, red bell pepper, carrots, celery, English cucumber, zucchini, chickpeas, capers, paprika, cayenne pepper, and Italian dressing together in a large bowl. Season with salt and ground black pepper.Drizzle olive oil on one side of each bread slice and spread chickpea mixture on half the slices. Top with second piece of bread to make a sandwich.
