1 ½ pounds cabbage, coarsely chopped1 small red bell pepper, chopped1 onion, chopped2 stalks celery, sliced2 tablespoons seeded and minced jalapeno pepper1 ½ teaspoons minced fresh ginger root¼ cup crunchy peanut butter3 tablespoons soy sauce2 tablespoons lime juice1 tablespoon white sugar1 tablespoon dark sesame oil1 teaspoon salt½ cup chopped dry-roasted peanuts
Directions

Toss cabbage, red bell pepper, onion, celery, jalapeno pepper, and fresh ginger in a large salad bowl. Whisk peanut butter, soy sauce, lime juice, sugar, sesame oil, and salt in a separate bowl until dressing is smooth. Pour dressing over slaw and toss to combine. Let stand at least 1 hour; serve sprinkled with chopped peanuts.
