Ingredients

  • 1 head red cabbage, shredded
  • 1 ripe tomato, chopped
  • 10 baby carrots, chopped
  • 1 (8 ounce) can pineapple tidbits, drained
  • ⅔ cup chopped pecans
  • ½ Red Delicious apple, cored and cut into thin chips
  • ½ red bell pepper, seeded and chopped
  • ½ cup dried cherries, or to taste
  • 1 green onion, chopped
  • 1 teaspoon chopped cilantro, or to taste
  • 1 teaspoon chopped fresh parsley, or to taste
  • ¼ teaspoon dry mustard powder, or to taste
  • salt and ground black pepper to taste
  • 2 tablespoons mayonnaise
  • ½ cup honey

Directions

  • Toss red cabbage, tomato, baby carrots, pineapple, pecans, apple, red bell pepper, dried cherries, green onion, cilantro, parsley, dry mustard, salt, and black pepper together in a large salad bowl until thoroughly combined. Gently mix mayonnaise into the slaw and drizzle with honey; stir again to combine all ingredients. Cover bowl and chill before serving.
